Cupcake ATM success at Sprinkles Cupcakes Chicago

Yay! I found another credit card in my purse after mine was declined at the Sprinkles Cupcake ATM and got my chocolate marshmallow cupcake! I was even able to explain to a guy trying to use it that it doesn't take MasterCard debit cards. It was fun. Video coming soon. The Sprinkles Cupcakes ATM sells a variety of cupcakes, including their doggie cupcake and vegan and gluten free cupcakes.

Cupcake blogger sadness - I came to Chicago in large part to try the Sprinkles Cupcakes ATM and it doesn't take MasterCard debit and that's the only card I have on me right now. Wish I'd known that but it was still cool to see. Video of my attempt to use the cupcake ATM coming soon!

Have a permanent reminder to Keep Calm and Eat Cupcakes

I saw these Keep Calm and Eat Cupcakes hollow boxes that you can hang on the wall at Barnes & Noble the other day, and think they'd make great holiday gifts! I just had to rebook a flight and it was a little stressful, but I already implemented the keep calm part of the equation and now am off to eat cupcakes!

Time to celebrate: A cupcake tree with chocolate Twizzler trunk and a cupcake wreath

I love this idea for cupcake trees, and even though I'm more of a red Twizzler than chocolate Twizzler fan, they work perfectly as the tree trunks! It makes me so happy to see candy used alongside cupcakes and these sound fun to make with kids or for a holiday party, and you could do whatever you want to decorate them on top; I think I'd use Skittles (not sure if they would stay on though). Eggnog Bourbon Caramel Mini Cupcakes + Recipe

Kristin over at Little Devil Cupcakery in Ohio shared her favorite holiday cupcakes with us!  Eggnog + Bourbon + Caramel goodness all wrapped up in a mini cupcake!

Eggnog Bourbon Caramel Cupcakes 
Makes 24 standard cupcakes 

1 ½ C granulated sugar
½ C butter, room temp
3 eggs, room temp
1 tsp vanilla
¾ C eggnog
¼ C bourbon
2 ¼ C flour
1 tsp baking powder
 1 tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg

Preheat your oven to 350 F. Cream together sugar and butter until light and fluffy. Beat in eggs, blending well after each. Mix together the eggnog, bourbon, and vanilla and set aside. In a bowl, mix together flour, baking powder, baking soda, cinnamon, and nutmeg. Alternate adding dry and wet ingredients into egg mixture mixing until combined. Scoop into lined cupcake tins about 2/3 full and bake 20-22 minutes. After cooling in pans for about 5 minutes, I brush the tops of the cupcakes with a bit of bourbon. This is optional!

Bourbon Caramel Cream Cheese Frosting 
2 T brown sugar
2 T whipping cream
1 T butter
pinch salt
2 T bourbon
1 ½ packages cream cheese, room temp
½ C butter, room temp
4 C confectioner’s sugar

Heat brown sugar, cream, butter, and salt over medium high heat whisking until sugar is dissolved. Cook for another minute. Pour in bourbon and stir to combine. Take off heat and let cool. In the bowl of an electric mixer, beat cream cheese and butter until soft. Add the confectioner’s sugar ¼ cups at a time, beating to combine after each addition. Add three tablespoons of the cooled bourbon caramel (you might have some left over) and beat to combine. Frost your cupcakes and used any leftover caramel to drizzle tops!

topped with nutmeg cream cheese frosting.

Eggnog Cupcakes with Nutmeg Frosting

Ingredients

Eggnog Cupcakes (Yield: 22-24 cupcakes)

• 1/2 cup unsalted butter (room temperature)
• 1 1/2 cups granulated sugar
• 3 eggs
• 2 cups all-purpose flour
• 1 teaspoon salt
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1 cup eggnog
• 1 teaspoon rum extract
• 1 teaspoon vanilla extract

Nutmeg Cream Cheese Frosting

• 1 (8 oz.) package cream cheese (room temperature)
• 1/2 cup unsalted butter (room temperature)
• 4 cups confectioners' sugar
• 2 tablespoons eggnog
• 3/4 teaspoon nutmeg

Instructions

Preheat oven to 350 degrees. Line two cupcake pans with paper liners.

In a large bowl, cream the butter and sugar together. Beat in the eggs. In a separate bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon and nutmeg. In another bowl, mix the eggnog, rum extract and vanilla. Alternate adding the dry and wet mixtures to the butter/sugar/eggs until thoroughly combined.

Fill cupcake liners 2/3 with batter and bake for 18-20 minutes. Remove from pans and allow to cool completely on a wire rack.

In a large bowl, beat the cream cheese and butter until creamy. Mix in the eggnog. Mix in the confectioners' sugar a little at a time, until thoroughly combined. Add the nutmeg.
